How do you sublimate a beef tartare with a light, spicy red wine? I’ve set my sights on a lovely, juicy expression of the œillade grape variety. Le Clos du Serres has seduced us with this rare grape variety capable of producing ripe wines without excessive alcohol. Olivier Poussier best sommelier in the word.

Aging 1 year in 1600 liter Tava amphora preserving the purity of the fruit and the minerality.
A free spirit guided by our inspiration, with a selection of the finest juices of the vintage.
Until 2017, this cuvée was a tribute to the rare old Carignans, but we had to pull them out in 2018 because of their age.
From 2021, it will be a blend of Syrah, Grenache and Carignan in a top-of-the-range TAVA terracotta jar. Heated to 1200 degrees, the wine tightens the pores.
The amphora shines through its neutrality to transcend the definition of a terroir.

The result is wines that are much more expressive than in vat and close to barrel, with superb aromatic sparkle and silkier tannins, all without any woody notes.

Characteristics of the land and microclimate
Shale ist at an altitude between 150 and 200m on the foothills of the Larzac plateau.
The grapes ripen slowly thanks to the cool nights which mean they mature with good acidity and stay incredibly fresh.
Tasting
The soft Grenache with its hints of blackberries, blackcurrants and a touch of grated chocolate, is a perfect foil for the sharper, slightly liquorice notes so characteristic of Carignan.
In the mouth, full, well balanced tannins end on a rich, slightly candied note reminiscent of cherries and blackcurrant.

GUIDE VERT RVF 94/100 Les Maros 2022 is a top-flight Grenache, reminiscent of pomelo and blood orange. A caressing, complex wine, floral, with chalky tannins, bearing the colours of its schist terroir.
LA TULIPE ROUGE coup de cœur 92/100 The estate’s old Grenache vines set the tone for this ruby-red cuvée with hints of candied cherries, chilli, hot stone and peppermint. The palate is vibrantly fruity, dense, spice-infused, both warm and fresh, framed by fine, tight tannins. A rare sensation of warmth and coolness, and a fine expression of Grenache and the appellation. Keeps well.

raspberry and red cherry spring from the glass, as well as some ripe blueberry and bramble notes. Elegant, refined aromatics jump from lavender to red apple to sage. Such an appetising mouthful, with red cherries, plums, wild strawberries and a succulent, mouthwatering finish tinged with thyme. A wine that’s really focused on the freshness of the fruit, and all the better for it.

Vintage 2017 DECANTER 91/100 A fruity nose. Dense and structured on the palate, with raspberry and persistent flavour, a touch of spice and a finish with mineral notes. To age for a few more years.

LE ROUGE ET LE BLANC : 15.5/20, top 4 tasting. fresh juice. The sapidity and tension are there, aeration does it good and brings out the floral expressions. A deep wine with an elegant austerity.
