Sébastien Fillon, Vigneron - Domaine Le Clos du Serres - AOC Coteaux du Langudoc, Terrasses du Larzac
Sébastien Fillon, Vigneron

I became a wine maker at 30 ; here are just a few reasons why.

Being a vigneron .

Can be a lonely occupation .

When I start out on my tractor at 5 am to care for my vines as best I can;

When I'm deciding on the vinification , I'm alone with my hopes and fears, with what I think I've gleaned from my vines and translating that knowledge into my wines.

Adds to the pleasure of being with others .

A desire to share the fruits of my labour. A shared bottle of wine is a mark of social contact, e proof that one wants to spend time with the other.

Is the thrill of tasting a wine which, thanks to hard work and determination, expresses the riches of the terroir.

Means taking an occasional gamble while working, whether the weather looks promising or worrying, one must work with it, as it dictates.

Gives me a strong link with nature; sculpting the landscape as I work means I am a key influence on the land in which I live and which I enjoy promoting through my wines.

allows time to run its course : developing vines takes patience.

It means paying attention to what nature tells me, learning to watch, to wait - sometimes for several years - being demanding yet understanding with it much as I try to be with my own children, taking the right decision to help her give of her best.

Means that every year is a new adventure .

Why settle on the Terrasses du Larzac ?

"I spent three years searching for a vineyard and I found the most appealing lands here. There's everything one needs to make great wine : arid soil, deep water, sun, a very special climate. After the era of mass wine production, it was here that Languedoc quality wines began re-emerging in the '90s.

Nowadays this outstanding terroir is buzzing and its true potential has only been recognized in the past few years.

The Terrasses du Larzac appellation is still young but its reputation is coming on in leaps and bounds. The number of seriously high quality vineyards in the sector is incredible. One only needs to look in the reference guides."
